POTATO BOATS 
2 pats of butter
1/4 c. cheese, shredded (any type)
1 lg. scrubbed potato
Button mushrooms (optional)
Strips of cucumber (optional)
Pitted black olives (optional)
Carrots, sliced or cut into sticks (optional)
Cheese slices, cut into shapes (optional)
Peppers, cut into strips (optional)
Lettuce, shredded (optional)
Watercress (optional)

Preheat oven to 400 degrees. Prick potatoes and place them on a greased baking pan. Bake for 1 1/2 hours. Cut potatoes in half lengthwise. Scoop centers into bowl and mash. Stir in butter and cheese. Spoon mixture back into oven for 15 minutes. You can decorate the potatoes once they have been baked a second time. Make them into sailboats, rowboats or tugboats using the optional ingredients. Makes 2 servings.
