GOURMET POTATOES 
6 med. potatoes
2 c. shredded cheese
1/4 to 1/2 c. butter
1 1/2 c. sour cream
Paprika
1/3 c. finely chopped onions
1/4 tsp. pepper
2 tbspl butter
1 tsp. salt

Cook potatoes in skins. Peel and shred coarsely. Combine cheese and butter. Melt. Remove from heat and add sour cream, onion and seasoning. Add potatoes and put in greased 2 quart casserole. Dot with butter and sprinkle with paprika. Bake uncovered for 30 minutes at 350 degrees. Serves 8.
