FRESH CABIN APPLE CAKE 
3 1/2 c. apples, peeled and cut in dime-size pieces
3 eggs
1 1/2 c. oil
2 c. sugar
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 c. chopped pecans or walnuts
2 tsp. vanilla
3/4 stick butter
1/2 to 1/3 c. milk
1 c. brown sugar

Preheat oven to 350°F. Beat eggs and oil together in a large bowl. Combine sugar, salt, soda, cinnamon and flour together in small bowl and then gradually add to egg mixture. Add apples, nuts and 1 teaspoon vanilla, mixing by hand.

Bake in well-greased 9 x 13-inch pan for 60 to 70 minutes or until done when toothpick is inserted in middle.

In a small saucepan, combine brown sugar, butter and milk. Bring to a boil. Remove from heat and add 1 teaspoon vanilla. Punch holes in baked cake and pour this sauce over cooled cake.
