FRESH APPLE CAKE 
1 c. salad oil
2 eggs
2 c. sugar
2 1/2 c. plain flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking powder
1 c. walnuts or pecans
3 c. chopped apples
1 (6 oz.) pkg. butterscotch chips

Mix oil, eggs and sugar in bowl. Sift together flour, soda, salt, cinnamon and baking powder. Add to cream mixture. Stir in chopped apples and nuts. Spread mixture in greased 9 x 13-inch pan. Put butterscotch chips on top.

Bake at 350°F for 55 to 60 minutes. Cool and cut into squares. For best results, bake a day or 2 ahead.
