FRESH APPLE CAKE 
1 c. oil
2 c. sugar
3 large eggs
2 c. plain flour
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla flavor
1 tsp. cinnamon
3 large apples (diced)
1/2 pecans (chopped)

Icing:

1/4 c. evaporated milk
1 stick butter
1 c. light brown sugar

Mix well, one cup oil, two cups sugar, and three large eggs. Add to mixture and stir, 2 cups flour, baking powder, salt, vanilla, cinnamon, eggs, apples, and pecans. Mix well.

Bake in large bundt pan about 1 1/4 hours or until cake is done. Cool for 10 minutes. Dump cake onto plate. Cook icing and pour over cake.

Icing: Boil for 2 minutes and pour over cake while cake is still hot.
