FRESH APPLE CAKE 
3 c. chopped raw tart apples
1 1/2 c. all-vegetable cooking oil
2 c. sugar
3 c. all-purpose flour
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
1 tsp. vanilla
3 eggs
1 c. chopped pecans

Peel apples and chop. Set aside. Pour oil into large mixing bowl. Add sugar and eggs and beat well. Sift flour with salt, soda and baking powder. Gradually add flour to creamed mixture. Add vanilla. Gently fold in chopped apples. Grease a 10-inch tube pan and line with waxed paper. Pour in batter.

Bake at 350°F for 1 hour or until done. When cake is cool, remove from pan and drizzle on Sugar Glaze.

Sugar Glaze:

1 1/2 c. confectioners sugar
2 tsp. vanilla
3 tbsp. water

Sift powdered sugar into bowl; moisten with water and add vanilla. Pour over cake.
