MERINGUE PIE SHELLS 
2 egg whites, room temperature
1/2 tsp. vanilla
1/4 tsp. cream of tartar
1/2 c. sugar

Preheat oven to 275 degrees.

In small grease free bowl beat egg whites until soft peaks. Gradually add vanilla, cream of tartar and sugar. Beat at high speed until stiff peaks form.

Spread mixture into lightly sprayed pie plate, building up around sides, etc. to form pie shell.

Bake at 275 degrees for 60 minutes. Turn off heat. DO NOT open oven! Allow to dry in oven for 60 minutes longer.

Cool completely before filling. Fill with fresh fruit, fat free pudding or as you desire. Fat free ice cream is also very good.
