PURPLE PLUMS PRESERVED
Take an equal weight of fruit and nice sugar. Take a clean stone jar and fill it with the fruit and sugar in layer. Cover them and set the jar in a kettle of water over the fire. Let them stand in the boiling water all day, filling up the kettle as the water boils away. If at any time they seem likely to ferment, repeat this process. It is a simple and excellent way of preserving plums.
