CRANBERRY BREAD | |
2 c. flour 1/2 c. sugar 1/2 tsp. baking soda 1/2 tsp. salt Juice and rind of 1 med. orange 2 tsp. melted butter Hot water 1 egg, beaten 1 tsp. vanilla 1 c. cranberries, halved 1/2 c. chopped walnuts Preheat oven to 350 degrees. Sift dry ingredients together. Measure together orange juice, grated rind, and melted butter; add enough hot water to make 1 cup. Stir liquid into dry ingredients. Add remaining ingredients and stir well. Bake in 9x5 inch loaf pan that has been sprayed with vegetable pan spray. Bake for 1 hour or until toothpick inserted comes out clean. Let stand for at least 1 hour for easy slicing. Yield: 18 slices. Serving size: 1/2 inch slices. Exchanges per serving: 1 bread and 1 fat. Sodium per serving: 102 mg.
