SWEET POTATO PIE 
5 med. sweet potatoes
1 tbsp. vanilla extract
2 lg. eggs
1/2 tsp. salt
2 c. sugar
1 can condensed milk
1 tbsp. cinnamon
2 unbaked pie shells

Wash and peel sweet potatoes and cut into chunks. Boil in saucepan with 1 1/2 tablespoons salt until tender enough to mash. Be sure to cover all potatoes with water. Mash potatoes and add all ingredients. Beat for 2 minutes and pour into pie shells. Preheat oven to 350 degrees and bake for approximately 50 minutes or until toothpick comes out clean. Makes 2 pies.
