PORK AND BEAN BREAD | |
1 c. raisins 1 c. boiling water 3 eggs 1 c. oil 2 c. sugar 1 tsp. vanilla 14 oz. can Libby's deep browned beans 3 c. flour 1 tsp. cinnamon 1/2 tsp. salt 1 tsp. baking soda 1 c. chopped pecans or other nuts Combine raisins and boiling water; set aside. Beat together eggs, oil, sugar, vanilla and beans, mixing until beans are somewhat broken. Combine flour, cinnamon, salt and baking soda; add to egg mixture along with raisin water mixture and pecans; mix well. Pour into well greased large pan, about 9"x5" or 2 small loaf pans, about 3" x 7" x 1 1/2". Bake at 325 degrees for 60 minutes (less for small pans) or until bread tests done. |
