EGGPLANT CASSEROLE | |
1 lg. eggplant 1/2 c. grated cheese 1/4 stick butter 1 egg, beaten 1 tsp. salt and pepper 1 c. cracker crumbs 3 tbsp. milk Pinch soda 1/4 c. onion (optional) Boil eggplant in small amount of water until soft; mash. Add remaining ingredients. Pour into greased casserole and bake for 30 minutes at 375 degrees until brown. Makes 5 or 6 servings. |
