EGGPLANT CASSEROLE 
6 tbsp. butter
2 c. cooked eggplant, cubed
1 tbsp. chopped onion
1 tsp. salt
1/4 tsp. black pepper
1 c. milk
1/4 tsp. sage
1 c. cracker crumbs
1 c. Cheddar cheese, cubed
2 eggs, beaten

Add butter to hot eggplant and mix until melted. Add remaining ingredients and mix well. Pour into greased casserole. Bake at 350 degrees until center rises, about 30 minutes or until mixture is set. Yield 6-8 servings.
