BROCCOLI CASSEROLE 
2 pkgs. frozen chopped broccoli
1 c. minute rice
1/4 c. water
1/2 c. milk
1 med. onion
1 stick butter
1/4 lb. Velveeta cheese, shredded or use Swiss or cheddar, shredded
1 can cream of mushroom soup, diluted with 1/3 c. water
1 can onion rings (French's)

Defrost broccoli, saute onion in butter. Butter 8 x 2 x 8 inch glass dish. Put onions in dish. Pour water and milk over rice. Mix all ingredients together. Bake at 350 degrees for 45 minutes. Add onion rings last 2 minutes of cooking.
