HONEY APPLE BRAN MUFFINS 
1/2 c. honey
1/2 c. vegetable oil
1 tsp. vanilla extract
2 eggs
1 c. bran
1 1/2 c. whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. milk
1 3/4 c. chopped apple
1/2 c. raisins
1/2 c. currants

Heat oven to 375 degrees. In large bowl, beat honey and oil together. Add vanilla and eggs. Beat well. Put bran into another bowl. Sift flour, baking powder, soda and salt into the bowl with the bran. Add dry ingredients into bowl with oil mixture. Add milk to this. Do not over mix. Fold in apples, raisins and currants. Fill muffin cups 3/4 full. Bake for 20 to 25 minutes. Let cool in muffin tins for 10 minutes then remove.
