CUCUMBERS AND ONIONS | |
2 c. thinly sliced peeled cucumbers 2 c. thinly sliced yellow onions 6 whole sm. or 3/4 c. sliced pickled beets 1 1/2 c. cider vinegar 1/2 tsp. salt Pinch of sugar or more to taste (up to 1 tbsp.) In a large glass bowl, combine cucumbers, onions and beets. In a small bowl, stir together 1/2 cup water, vinegar, salt and sugar until dissolved. Pour over vegetables, cover and chill at least 1 hour before serving. Can be stored for up to 5 days in refrigerator. 13 calories per 1/4 cup. |
