CUCUMBER RELISH 
1 gal. finely chopped cucumbers
3 bell peppers
2 tbsp. celery seed
4 c. vinegar
2 tbsp. curry powder
2 tbsp. pickling spices
3 onions
3 tbsp. salt
2 tbsp. mustard seed
4 c. sugar

Chop finely one gallon of cucumbers, 3 onions, 3 bell peppers and combine with salt, celery seed and mustard seed. Drain in a colander overnight. Bring vinegar to a boil and add sugar, curry powder and pickling spices. Pickling spices should be tied in cheesecloth so that it will not remain in final relish. Seal in hot jars. Makes about 6 pints.
