NO FLOUR PEANUT BUTTER COOKIES 
2 c. sugar
2 c. peanut butter
2 eggs, beaten
2 tsp. vanilla

Mix all ingredients together. Roll into small balls. Press with fork. Bake at 350 degrees for 8 minutes.

My Grandma used to make these, they are the best. I told my second grade teacher that my Grandma made cookies with no flour and she called me a liar. My parents were very upset and my Grandma wrote a letter to the teacher with the recipe. She apologized later. Grandma learned this from an Italian woman in San Francisco around 1935.

Finally, the correct recipe -- including the vanilla! Everyone else either leaves off the vanilla or adds something that changes the texture. This recipe is perfect as is -- unless you're diabetic, of course. I wanted something to bake for my cousin and her family as a "thank you", but her son is autistic and cannot have gluten at all. This recipe is perfect for him because it's gluten free. Everyone in the family loved the cookies. I am replacing my flour recipe with this one. It's way quicker and easier than the flour recipe, and every bit as good. Thank you for posting it. I plan to try this recipe with almond butter and one using sunflower seed butter instead of peanut butter to see how they turn out. I may try a recipe with tahini (a sort of sesame seed butter), too. I'll let you know how that turns out.

I just made these cookies for the kids that's I take care of. I have to say I was worried about them turning out right with no flour. However they turned out GREAT! I am thinking I like these cookies over the ones with flour! I am so glad that I found this recipe :) They were was easy and very TASTY! I LOVE THIS RECIPE! Everyone that bakes should try these!

It's the best and easiest pb cookie recipe ever. I get the best results from Jif or Skippy cruncy pb, other brands just don't work for this recipe.

Great recipe, I changed it a bit. I took away 1 cup sugar and replaced it with 1 cup finely chopped pistachio and instead of vanilla I used Maple Syrup
