SPINACH RICE 
4 c. boiled rice
3 med. onions chopped
4 tbsp. oil
6 cloves
1 tsp. mustard
3 c. cooked tomatoes
1 c. grated cheese
salt and pepper

Brown onions and peppers in cooking oil. Combine with remaining ingredients. Season to taste. Pour into well oiled baking dish.

Bake in moderate over 375°F for 35 minutes. If desired 1/2 c. diced bacon may be substituted for cooking oil.
