CHILAQUILES (ENCHILADA
CASSEROLE)
 
2 doz. corn tortillas (cut up in triangles)
1 chicken (boiled, deboned and cut up in cubes)
1 lg. onion, chopped
1 lb. each Jack and Longhorn cheese (shredded)
1 lg. can "Las Palmas" red chili sauce

In large skillet, fry tortilla triangles (a few at a time) until they are crisp and golden. Take out of the skillet and place in plate lined with paper towels to absorb the oil. Repeat procedure until all the tortilla chips are done.

In large bowl, place the tortilla chips, cubed chicken, shredded cheese, chopped onion and red chile sauce. Mix well, then place in baking dish. Bake for 20 to 30 minutes at 350 degrees until cheese bubbles.

Come on! first cook a real salsa, then fry the tortillas, then cook together the salsa with fried tortillas and then add cheese, chicken, onion, egg or whatever you want to add to the chilaquiles, but dont mix and cook everything at once, for God's sake!
