VEGETABLE AND BEEF FAJITAS | |
1 lb. beef top round steak Partially freeze beef. Thinly slice across the grain, into bite size strips. 1/4 c. salsa For sauce, in a small bowl stir together the Italian salad dressing and salsa. Set aside. 2 c. loose pack frozen broccoli, French style green beans, onions and red peppers or broccoli, corn and peppers Preheat a wok or large skillet over high heat. Add oil. (Add more oil as necessary during stir frying.) Stir-fry frozen vegetables in hot oil for 3 to 4 minutes or until crisp tender. Remove vegetables from wok. Add half of the beef to the wok or skillet. Stir fry beef for 2 to 3 minutes or until done. Remove from skillet. Stir fry the remaining beef for 2 to 3 minutes. Dairy sour cream Assorted toppings (Choose from shredded cheese, sliced green onions, chopped tomatoes, sliced, pitted ripe olives and salsa.) Return all meat and vegetables to wok. Add sauce mixture. Heat through. Let each person fill his/her tortilla. Dollop with sour cream and top with the shredded cheese, green onions, chopped tomato, ripe olives and/or salsa, as desired. Makes 4 servings. |
