OVEN BRAISED SHORTRIBS 
2 lbs. shortribs
2 tsp. salt
1 sm. onion, chopped
4 tbsp. flour
1 tbsp. bacon drippings
1/2 c. stock or water

Have butcher cut shortribs in serving size pieces. Peel onion, chop and mix with flour and salt. Dredge pieces of meat on all sides in flour mixture. Heat drippings in Dutch oven. Add meat and turn to brown on all sides. Add stock or water. Cover tightly and bake in 350 oven 2 1/2 hours or until meat is very tender. You may add vegetables to the meat if so desired for the last 45 minutes. It's an easy meal for a family of 4.
