BAKED BREADED CHICKEN 
Chicken breast, skinless & boneless (enough for number of persons)
Mayonnaise
Cheese (white American)
Bread crumbs

Take each boneless, skinless breast and pound it out with a meat hammer; both sides. Spread a thin layer of mayonnaise on each side of chicken breast. Cover chicken breast on both sides with bread crumbs. Put extra on one side that will be the inside. Place 1/2 to 1 piece of cheese on the inside. Roll the chicken so the extra bread crumbs and cheese will be baked on the inside. Hold in place with toothpicks. Bake in baking pan in oven for approximately 20 to 25 minutes at 375 degrees until outside bread crumbs are toasty brown. Take out and serve. Serves as many as you choose.
