SWEET POTATO CASSEROLE 
6 cooked sweet potatoes, sliced
1/2 c. brown sugar
5 tbsp. butter
2 med. oranges
1/2 c. orange juice
1/4 c. strained honey
1/4 c. fine bread crumbs

Arrange layer of potatoes in greased casserole, sprinkle with 3 tablespoons brown sugar, dot with 2 tablespoons butter and cover with a layer of thinly sliced unpeeled oranges. Repeat layers. Over all pour orange juice mixed with honey. Combine crumbs with brown sugar and sprinkle over top. Cover and bake in moderate oven, 350 degrees, 30 to 40 minutes, remove cover the last 15 minutes. Serves 6.
