SWEET POTATO CASSEROLE 
1 can whole sweet potatoes
3 tbsp. butter
1/2 tsp. salt
1/4 tsp. hot orange juice
1 c. crushed pineapple, drained
4 marshmallows, cut in half

Mash potatoes, add butter, salt, and orange juice; beat until light and fluffy. Add drained pineapple. Pour into greased 1 quart casserole. Dot with butter. Bake at 375 degrees for about 15 minutes. Top with marshmallows and bake until marshmallows are melted and golden, about 15 minutes.
