GINGERBREAD FANTASIA STAINED
GLASS COOKIES
 
3 1/4 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. ground ginger
1/2 tsp. ground allspice
1/2 tsp. cinnamon
3/4 c. butter, softened
3/4 c. sugar
1/2 c. light molasses
2 tbsp. water
9 (5/8 oz.) fruit-flavored lollipops (3 each: red, yellow, green)

In a medium bowl, combine flour, baking soda, salt and spices. Set aside. In a separate bowl, cream butter and sugar at medium speed until fluffy. Add molasses and water, beating until well blended. Gradually add flour mixture and beat at low speed just until mixed. Cover and refrigerate overnight.

Place lollipops in a plastic bag, one color at a time, and crush. Set aside. Divide dough into 6 portions. On a heavily floured surface, roll each portion out 1/8 inch thick and cut out shapes using a floured 4 to 5-inch cookie cutter. Re-roll dough scraps and cut again. Place cookies on a foil-lined cookie sheet. With a small knife, cut out and remove designs from center of cookies. Use a spoon to fill the cut-outs scantily with crushed lollipops.

Move oven rack to upper third of the oven.

Bake at 375°F for 5 to 6 minutes until cookies are firm and candy is melted. Slide foil off cookie sheet and cool.
