SALMON QUICHE 
9 inch unbaked pastry shell
1/4 tsp. dill weed
7 3/4 oz. can salmon, drained and flaked
2 tbsp. sherry
4 eggs
1 1/2 c. light cream
1 env. onion - mushroom mix
2 c. grated Swiss cheese

Place pastry shell in 400 degree oven and bake for 10 minutes. In the meantime, in a large bowl, beat eggs, blend in cream, onion - mushroom mix, dill, salmon and sherry. Grate cheese. Remove shell from oven and reduce heat to 350 degrees. Scatter cheese over partially baked pastry. Pour in egg mixture. bake for 40 minutes or until custard is set. Enjoy hot or warm. Serves 6. Note: If this is served as an appetizer, it will serve 12.
