SALMON QUICHE LORRAINE 
1 lb. can salmon, drained and flaked
1 c. mayonnaise
1 tbsp. mustard
Juice of 1 lemon
2 eggs, slightly beaten
1/2 c. half and half or Dairy Rich
2 onions, sliced thin
Salt and pepper to taste
2 frozen pie shells

Saute onions in butter. Place on bottom of pie shells. Mix remaining ingredients together and pour over onions. Bake 375 degrees for 30 minutes or until a knife comes out clean.
