SALMON QUICHE 
Pastry for one crust pie
1/3 c. thinly sliced green onions
4 eggs
1/2 c. half and half or milk
3/4 tsp. salt
1/4 tsp. paprika
1/8 tsp. pepper
15 1/2 oz. can salmon, drained, flaked, reserving liquid
6 oz. (1 1/2 c.) shredded Swiss cheese
Fresh parsley, if desired

Prepare pastry for filled one crust pie using 9 inch pie pan. Heat oven to 375 degrees. In small skillet, melt butter; saute onions until crisp tender. In large bowl, combine eggs and half and half; beat until smooth. Add salt, paprika, pepper and onions; mix well. Stir salmon and all reserved liquid. Sprinkle cheese in bottom of pastry lined pan. Pour salmon mixture over cheese. Bake at 375 degrees for 45 to 50 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving. Garnish with fresh parsley. 8 servings.
