MRS. NETTIE JAMES' EGGPLANT
CASSEROLE
 
1 onion, chopped
1/2 bell pepper, chopped
3-4 tbsp. butter
1 med. eggplant, chopped
1 can mushrooms
1 c. cheese
3-4 eggs

Melt butter in skillet, cook onion, pepper, eggplant about 10 minutes. Stir in mushrooms, cheese, and eggs. Cook until eggs are done and cheese melted.
