CREAM OF BROCCOLI OR ASPARAGUS 
1/2 - 2/3 c. flour
2 sticks butter
2 qts. milk
1/2 - 1 c. onion
1/2 - 1 c. celery
1/2 - 1 c. mushrooms
1/2 - 1 c. potatoes
Broccoli or asparagus, par-boiled
Cooking sherry
Salt and pepper
Curry, garlic
Parsley, basil
Oregano

Melt butter; add flour to make a paste. Slowly add milk. Stir while mixture gets thick. Cut vegetables in large pieces. Add to paste mixture. Let simmer. Add par-boiled broccoli or asparagus. Cook on slow heat. You may use some of the vegetable water, if needed. Add some sherry and the herbs to taste. Let cook until creamy. Crabmeat or lobster can be added.
