SAUSAGE SANDWICHES | |
4 tbsp. chopped onion 4 tbsp. chopped green pepper 1 clove garlic, finely chopped 2 tbsp. oil 2 (8 oz.) cans tomato sauce with cheese 1/4 c. water 1/2 tsp. basil 1/4 tsp. oregano Pepper 1 lb. Italian sausage 2 tbsp. butter 1/2 c. grated cheese (romano, parmesan, mozzarella, or American) In medium saucepan, saute onion, green pepper and garlic in oil 5 minutes, stirring frequently. Add sauce, water, basil, oregano, pepper, and bring to boil. Simmer uncovered for 15 minutes. Cook sausage either in oven or on grill (your favorite way). Cut sausage to fit buns, then cut lengthwise and put into sauce. Sprinkle rolls with butter and toast under broiler. Arrange 2 to 3 halves or sausage on bottom half of each roll. Spoon on some sauce. Sprinkle with 2 tablespoons or so of grated cheese. Cover with tops and serve at once. |
