GREEN BEANS AND POTATOES | |
2 baking potatoes, unpeeled 1/2 lb. green beans 3 strips bacon 1 onion, sliced 1/4 c. red vinegar 2 tbsp. water 1 tbsp. sweet butter Salt and pepper to taste Cook potatoes until tender about 15 minutes. Then cut into 1/4 inch slices. Cook beans in boiling water until crisp and tender about 1 1/2 to 2 minutes and drain. Saute bacon until crisp. Add onion to bacon drippings and cook until golden about 5 minutes. Stir in vinegar and water. Cook until thickened about 3 minutes. Reduce heat to medium and toss in potatoes and green beans. Cook for 5 minutes stirring in butter and bacon and seasoning with salt and pepper. |
