LEMON PIE FILLING 
1 c. sugar
1/4 c. cornstarch
1/4 tsp. salt
2/3 c. cold water
1 tsp. lemon rind, grated
2/3 c. boiling water
3 egg yolks
1 tbsp. butter
1/4 c. lemon juice

Mix sugar, cornstarch, lemon rind and salt. Add cold water and stir until smooth. Add boiling water, cook stirring constantly until mixture is clear and thick. Beat egg yolks slightly and stir into cooked mixture. Add remaining ingredients and cook 1 minute. Pour into baked shell.

Meringue: Beat 3 egg whites and 3 tablespoons cold water until frothy. Add 3 tablespoons powdered sugar and beat into stiff peaks. Put on pie and brown in 375 degree oven.
