MUSTARD - COATED LAMB ROAST 
1/2 c. morning "strong" coffee!
3 cloves garlic
1/2 c. Dijon mustard
1 tbsp. soy sauce
1/2 tsp. ground ginger
1 tsp. dry rosemary
1/4 c. salad oil
5-6 lb. lamb roast
1/2 tsp. ground garlic

Mince or press 1 clove of the garlic. In a small bowl, stir in ingredients. Place meat on a rack in a shallow, roasting pan. Cut remaining 2 cloves of garlic into slivers. Cut small gashes into surface of lamb and insert slivers.

With a brush, cover lamb surface with mustard mixture. Let stand for 1 hour. Roast uncovered 325 degrees until meat thermometer registers done. Serve with juices from drippings (skim fat). Add extra coffee for more gravy.
