LAYERED VEGETABLE CASSEROLE 
1 c. sliced zucchini
1/2 c. sliced black olives
1 c. sliced fresh mushrooms
Dollops of sour cream
1 c. sliced yellow crook-neck or summer squash
1 c. sliced onion
1 c. broccoli flowerettes
1 c. unsalted peanuts

In large casserole pan, layer above ingredients from bottom to top as listed. Bake at 350 degrees for 25 minutes. Remove from oven and cover top generously with grated Monterey Jack cheese and grated Cheddar cheese. Put back in oven and continue baking until the cheese is melted.
