ZUCCHINI BEEF SKILLET 
1 lb. ground beef
1 c. chopped onion
3/4 c. chopped green peppers
1 1/2 tsp. salt
1/4 tsp. pepper
1 tsp. chili powder
5 c. sliced zucchini
2 lg. tomatoes
1/2 c. water
2 tbsp. chopped pimento
1 1/4 c. whole corn
1/4 c. chopped parsley

Saute beef, onion and peppers in large skillet until brown. Add remaining ingredients, cover and simmer 10 to 15 minutes until vegetables are tender. 10 to 12 servings.
