ZUCCHINI BEEF SKILLET | |
1 lb. hamburger 1 c. chopped onion 3/4 c. chopped green pepper 1 1/2 tsp. salt 1/4 tsp. pepper 1 tsp. chili powder 5 c. peeled zucchini, cut into 3/4 inch chunks 1 (10 oz.) pkg. frozen corn 2 tbsp. chopped pimento 1/4 c. chopped parsley 1 (6 oz.) can tomato paste Saute hamburger, onion, and green pepper in 12 inch skillet until browned. Drain fat. Add remaining ingredients. Cover and simmer until vegetables are tender. Add a little garlic salt to taste if you want to. About 10 minutes before serving, sprinkle with 2 cups grated sharp cheese. Cover. Makes about 6 servings. I serve a toss salad and garlic bread with mine. |
