CUCUMBER PICKLE STICKS | |
This takes about three days to complete. 7 lbs. extra lg. cucumbers (yellow) 2 1/2 c. household lime 4 gal. water 4 oz. (1/4 lb.) alum 1 qt. water 2 qts. white vinegar 1 tbsp. salt 2 tbsp. pickling spice 5 lbs. sugar FIRST DAY: Peel and cut cucumbers in about 1 1/2 inch sticks before weighing. Soak sticks in 2 gallons of water with lime added. SECOND DAY: Drain and wash in clear water; then soak in 2 gallons of water with alum added. THIRD DAY: Remove from alum water and soak 6 hours in clear water; drain. Make a syrup of one quart water, vinegar, salt, spices and sugar. Bring to a boil with cucumbers. Let stand for 4 hours. Simmer slowly for 30 minutes and place pickles in jars prepared canning jars and seal. |
