COTTAGE CHEESE WEDGE SALAD 
1 large head iceberg lettuce
1 1/2 cups cottage cheese, lightly salted
2 tablespoons minced onion
2 tablespoons diced green pepper
1/4 cup minced celery
1/4 cup minced radishes
sprouts (optional)

Remove core of lettuce head, forming a fairly large cavity. Cover and refrigerate lettuce until crisp.

Combine cheese, onion, green pepper, celery, radishes and fresh rinsed sprouts (alfalfa, broccoli, radish, onion, mung bean sprouts, etc) and fill cavity with the mixture.

Refrigerate for an hour, cut lettuce into wedges and serve with a Vinaigrette or any olive oil based dressing.

Dessert Variation: Omit peppers, onions and radishes. Sprinkle cottage cheese lightly with sugar and add pineapple bits and fruit salad. Arrange mandarin oranges over salad. Top with some of the syrup/juice from the fruit salad or mandarin oranges.
