CORNMEAL COATED CHICKEN | |
1/4 c. butter 1/4 c. self-rising flour 1/4 c. self-rising cornmeal 1/2 tsp. paprika 1/2 tsp. onion powder 1/4 tsp. poultry seasoning 1/4 tsp. salt 1/8 tsp. thyme 1/8 tsp. pepper 1 frying chicken (3 lbs.) cut up Preheat oven to 350 degrees. Melt butter in 13x9x2 inch baking pan in oven, set aside. Combine flour, cornmeal, paprika, onion powder, poultry seasoning, salt, thyme and pepper in plastic bag; set aside. Rinse chicken in cold water; pat dry with paper towels. Shake chicken, 2 pieces at a time, in cornmeal mixture until thoroughly coated. Place chicken, skin-side down, in pan with melted butter. Bake 1 hour or until tender, turning with tongs or fork after 30 minutes. |
