CURRIED FRIED CHICKEN | |
1/2 c. all-purpose flour 1/4 c. plus 2 tbsp. cornmeal 1/2 tsp. salt 3/4 tsp. curry powder 1/2 tsp. paprika 1 egg 1 1/2 tbsp. milk 6 chicken breast halves Vegetable oil Combine flour, cornmeal, salt, curry powder and paprika; mix well and set aside. Combine the egg and milk in a shallow dish and beat until blended. Dip chicken in egg mixture and dredge in the flour mixture. Fry chicken in hot oil (350 degrees) 10 to 15 minute son each side or until golden brown. Drain chicken on paper towel. Serves 6. |
