SPANISH RICE 
1 c. white rice
1/4 c. cooking oil
1/4 c. chopped onion
1/4 tsp. minced garlic, optional
1 can of tomato sauce (or stewed tomatoes, strained)
1 tsp. cumin
Salt and pepper to taste
2 1/2 c. water

In a frying pan stir onion and garlic a few minutes at medium heat. Add rice and brown lightly. Add tomato sauce, cumin, salt and pepper and water. Cover and cook for 20 minutes. Simmer another 20 minutes or until liquid is cooked into rice.

Another variation is to add 1/2 cup of chopped green pepper and a can of corn.
