SPANISH RICE 
1 c. white rice
2 1/4 c. water (or part chicken broth)
1 chicken bouillon cubes, if no broth
1/4 c. tomato sauce
1/4 c. onion, green or yellow, chopped
1/2 tsp. garlic or 1 clove minced garlic
Pepper to taste
Cumin to taste
Chili powder to taste
3 tbsp. olive oil (or oil of choice)

Saute rice, onions, garlic in oil until golden brown. Add tomato sauce and mix (it splatters). Add liquid and spices. Stir and turn down as low as possible and simmer 14 to 17 minutes (14 for electric range, 17 for gas range). Then let set for 10 minutes.
