SPANISH RICE 
1 tbsp. bacon drippings (is best) OR shortening or oil
1 c. white rice
1 c. chopped onions
1 c. chopped green bell peppers
1 c. chopped fresh tomatoes
1 c. water
1 (8 oz.) can tomato sauce
Minced garlic to taste
Salt to taste

Brown rice in bacon drippings on medium heat in a skillet with a tight fitting lid. Add onions, stir often, add peppers, stir often, add tomatoes and stir often. Add 1 cup water and tomato sauce, plus garlic, plus salt; stir, cover with tightly fitting lid and turn heat down to simmer. Simmer for 20-25 minutes. Serves 6-8.
