SPANISH RICE 
6 slices bacon, fried crisp
3 tbsp. bacon drippings
1 cup white or brown rice
1 (16 oz.) can tomatoes (2 C.)
1 medium onion, chopped
1/4 cup green pepper, chopped
2 cup water
1/4 cup ketchup
1 tsp. salt
1/8 tsp. pepper

In bacon drippings, cook rice, onion and green pepper until is tender. Add bacon and other ingredients. Cover and simmer over low heat about 30 minutes, or until rice is tender and liquid is absorbed.

Makes 5 to 6 servings.

Note: For quick cooking rice, add 2 1/2 Cups minute rice after all other ingredients are added. Remove from heat and let stand 5 minutes. Fluff with fork.
