SCALLOPED HAM AND CHEESE 
1/4 c. butter
1/4 c. flour
2 c. milk
1 c. shredded American cheese
1 qt. coarsely shredded cabbage
1 lb. cooked ham, diced
1/4 c. chopped green pepper
Salt and pepper to taste
2 tbsp. butter
1/2 c. dry bread crumbs

Melt butter in a saucepan over low heat, blend in flour. Add milk, stirring constantly. Cook and stir until sauce is smooth and thickened. Add cheese and allow to stand over very low heat until cheese is melted, stirring occasionally. Meantime, cook cabbage in boiling salted water for about 3 minutes, then drain thoroughly. Add ham and green pepper to cheese sauce and season to taste. Arrange alternate layers of cabbage and sauce in a buttered casserole dish, having sauce on top. TOP with a mixture of the 2 tablespoons melted butter and dry crumbs. Bake about 20-25 minutes or until thoroughly heated and lightly browned on top.
