COCONUT BUTTERBALLS 
1 c. soft butter
1/4 c. sifted confectioners' sugar
1 tsp. vanilla extract
2 c. sifted all-purpose flour
1 1/2 c. flaked coconut
Sifted confectioners' sugar

Cream butter until light and fluffy, gradually adding sugar, then vanilla. Blend in flour, then coconut. Shape into 1 inch balls and place on ungreased cookie sheet. Refrigerate for about 15 minutes. Bake in a 350 degree F. oven for about 15 minutes or until delicately browned. While cookies are still warm, roll each in sifted confectioners' sugar. Makes about 4 dozen.
