FUNNEL CAKES 
2 beaten eggs
1 1/2 c. milk
2 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
2 c. cooking oil

In mixing bowl, combine eggs and milk. Sift together flour, baking powder, salt. Add egg mixture, beat until smooth. In 8 inch skillet heat oil to 360 degrees. Cover the bottom of a small funnel with your finger and pour 1/2 cup batter into funnel. Release batter into hot oil in spirals etc, holding close to surface of oil. Fry until golden, 3 minutes. Turn carefully and cook 1 minute longer. Drain on paper towel. Sprinkle with powdered sugar. Serve hot with favorite preserves.
