THREE-WAY BANANA BATTER 
1/2 c. soft butter
2 eggs
1 tbsp. lemon or lime juice
2 c. flour
1/2 tsp. salt
1/2 tsp. grated lemon or lime rind
1/2 c. chopped nuts
1 c. sugar
1 1/2 c. mashed ripe bananas (about 4 med.)
1 tsp. baking soda
1/2 tsp. cinnamon

In large mixing bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time, beating well after each is added. Stir in bananas and lemon juice.

Mix together flour, soda, salt, cinnamon, and lemon rind in a separate bowl. Blend into creamed mixture. Stir in nuts. Makes of one following:

COFFEE CAKE:

Turn into greased 9-inch square baking pan. Bake in 350 degree for 40 minutes until knife inserted in center comes out clean. Slice 2 bananas over top and sprinkle with a topping of 1/2 cup packed brown sugar mixed with 2 tablespoons melted butter. Broil 2 minutes or until topping is bubbly and lightly browned.

LOAF:

Turn into greased 9x5x3 inch loaf pan. Bake in 350 degree oven for 55 minutes.

MUFFINS:

Spoon into greased muffin pans. Makes 24. Bake in 350 degree oven for 15 to 20 minutes.
